Have you tried it ?It might be easier to use snow shoes.

I can't try it now cause there is no snow right now...I need to make some sort of track for the rear so the tire dosn't sink....
I have tried it in the dirt and the bike does push the ski so I think it will work

But with that gearing it will be really slow. Still if you are simply doing it for the challenge there are worse ways to spend your time.

Started working on the track today...
Using two short belts next to eachother, some angle iron, and some other junk.....When i get a chance to finish it i will post pictures. Can't work on it this weekend cause i am going to the nascar race in...Bristol?(Can't rember :D )
