I've seen road pedals and road shoes at widely varying prices. Can anyone tell me what you gain/sacrifice by paying more/less?

Coaster, Welcome to BFC, have fun / as for your question more money you put on you shoes and pedal, the more durable they become and less weight

I think the more expensive shoes are much more stiffer than the regular plastic soled shoes. The reason being that the soles are made of carbon fiber. I just love love love the Shimano and Northwave shoes. Check them out.
The more expensive pedals, have more features/are lighter. For example, the Look CX7 has this Q factor adjustment that no other pedals have. It is also very light. Shimano's PD-7700 is also much more lighter than the PD-6600 or PD-5500.
What type of riding will you be doing anyway? I suggest you try as many pedals as you can, and ask around a lot. People have varying opinions on the different pedals out in the market...sort of like saddles....some like it, some don't.
I use the Shimano PD-5500. It came with the gruppo, and has been working very well so far. Many other people, though, hate the Shimano pedals. Look and Time are very popular pedals, Speedplays too are worth a look. If you want cheap, I think Ritchey makes a Shimano SPD-R compatible pedal. I'd stay away from the Wellgos and other unknown brands though.

Altwegg, thanks for the reply. I do mostly secondary, 2 lane rural roads, about 35-50 mile/week. Not a lot of riding, but I'm sure the old Avocet flexible sole shoes I'm using with clips are working against me.
