My grocery store had a sale on eggs, 18ct. I get the feeling that sausage, bacon, and cheese omlettes are not the healthiest way to eat eggs. In the spirit of the "What do you put in your veggie steamer" thread that probably extended my life for a year:

How do you eat your eggs?

I like an omelette(sp) with cheese, broccoli, red bell peppers, onions, green onions, tomatoes and ham on a Jalapeno bagel.

How do you eat your eggs?

Breakfast burrito! Scramble an egg, maybe two, with just a smidge of cheese -- make really huge fluffy curds, then roll 'em in a tortilla with a dollop of salsa!

Fried rice! Take your leftover rice (white or brown), fry it up with some onion, mix some soy sauce and pepper in there, then push the rice aside and scramble an egg in the pan; mix it all back together! (Add other veggies in the frying part if you want to get your fiber and vitamins!)

Pancakes and cookies are other excellent suggestions. Mmm, and pudding.

Scrambled eggs and meatless sausage with a slice of whole grain toast is one of my favorite pre-ride breakfasts.

Can you tell I'm hungry?

Oooooh, 1/8 cup fat free shredded cheese, 1 tablespoon of gut bomb salsa or hot sauce, and eggwhites/eggs. Scramble all this together, mix in a spicy soy sausage crumbled up, jalapeno's, and tomatos. Wrap in a tortilla to make a burrito. Yum!

Also, good ol' fashioned hard boiled eggs are always tasty.

Oh yeah, Tabasco sauce is your friend if you go over easy/medium or scrambled.

Egg white omelets, egg white buritos, smidgeon of cheddar cheese in both. I also have been known to grill up chicken chunks in pan with PAM and then pour egg whites in and make an omelet like thingy.

Eggs are the cheapest food -- never more than a dime each. Even if you only eat the whites and throw out the yolks, they are still cheap as hell.

OH GOD...

Sunny side up (always with wheat toast, and corned beef hash)
In scrambled eggs with spinach and feta (like teh really slow cooked egs that are really rich and yummy, made by me!)
In an omlette with ALOT of combos: Just cheese; Flowers that grow in my backyard (yes I eat flowers); Apple and cheddar cheese; Meatballs (mmmmmm my moms, well I make then now) had that two days ago, I havbe had fish in them. Basically whatever is left over in the fridge is most of the time put in an ommlette at my house. :D

Spinach florentine at the JOHN HARVARDS for brunch is good, they just have to cook the egg less. Last time I had it was like a hard boiled poached egg.

I eat eggs with bacon, sausage melted cheese, and large slabs of toast slathered in butter. My doctor says I'm in great shape. Well, at least he told me my arteries are as hard as rocks.

MMmmm...thanks for the ideas, guys. I'm partial to scrambled + salsa myself, but I never have been able to get into hard-boiled eggs. Maybe w/ tabasco sauce they'd be good...

Wait a sec, something is really wrong with this thread. No one has chimed in to say how bad eggs are for you, mentioning the plethora of maladies you are certain to contract just by looking at them, and how there's a Government Conspiracy To Hide The Truth . . . makes me wonder.

Better go scramble up a batch before someone rains on the parade!!

I'm not sure about that, but have you ever tried / do you like Deviled Eggs? They're pretty easy, though a bit tedious to make. Just hard-boil some eggies, chill, remove shells (duh!), halve them lengthwise, scoop out the yolks into a bowl. Add some "Beau Monde" seasoning*, a little dijon mustard + a little sugar to taste, then put that back into the whites (you can get fancy and pipe it in but I'm never that patient). Sprinkle with a little Lawry's Seasoning Salt or just paprika if you prefer, and enjoy.

*Beau Monde is a seasoning mix made by Spice Islands, maybe others, just a mix of salt + celery seed + onion

Boy, I could tell you about eggs:

I worked in a restaurant when I was an undergrad that served breakfast (among other things) all day.
On the weekends (when the line was out the door) I probably cracked at least 200 eggs during a shift.
My award-winning omelettes and perfect sunnies were all the rage...

I remember times when I would have four omelettes going on the burners at once,
maybe one or two omelettes in the broiler, cheese-a-melting...
- a 6 foot long flat-top grill with eggs covering roughly 1/3 of it,
and several poachers bubbling away in a pot of water beside me.
I don't miss any of it!!!!! But I can cook a damn good egg now.

OOOHHH, you read my mind...I am hungry now too! Only way to eat them. Get whole wheat tortillas and fat free cheese and you are good to go...try to cut some of the yolks out though.

Hard boiled: reminds me . . . I have met quite a few people that don't know how to properly hard-boil an egg. The way to do it is: 1) place eggs in empty pot; 2) add cold water, enough to just cover eggs; 3) cover pot (important); 4) place pot on high heat and bring to *just* boiling (VERY important! Do not over-boil!); 5) remove from heat (leave cover on) and wait 15 minutes.

You can eat them like that. Sometimes I'll "cold shock" them: empty the cooking water and put some ice + cold water in the pot and wait another 5 minutes.

This, in my experience, yields perfec hard-boiled eggs. No green centers (that's what will happen if you over-boil). No runny yolks (high altitude may need to adjust wait time?). I like 'em with just a little salt, or maybe alternating bites with some salty cheese. mmmmmmmmmmm . . .

Also: it is a lot easier to peel them if you do it under running water.

I like the technique.
By 'perfect', what do you mean?
The yolk is a stiff gel, or is it dry and flaky?

There is a debate, based on preference, here...
on the definition of 'hard' boiled.
- not to get nerdy on egg prep, but I'd like to know. :)
