Are all hub cones the same?

I'm trying to restore a vintage gnutti hubs...the cones are badly pitted but the rest seems to be okay.

Are all cones the same size so I can easily swap them out or would I have to find cones that are a specific size?

Unfortunately, no. Lots of different threadings, axle sizes and cone designs exist. I've honestly never heard of Gnutti. Is it a Campagnolo clone of some kind? If so, you might be able to substitute some Campy cones. Good hunting!
