Will an "8-speed" SRAM Power Link work...

... on the chain for the 7-speed cassette chain on my folder? I suspect "yes" is the answer, because IIRC 7 and 8 speed chains are the same in the Shimano-compatible world. The only info on the chain that came with the bike (that's at that link) is "KMC, half-silver". I'd like to get a snazzy link like that to throw on my next Performance order (tonight!). The chain only has maybe 2000-2500km on it so I don't think an entire new chain is in order, but while I have your attention, what sort of replacement chain would I need to get? A regular 7/8 speed chain?

Depends on the KMC specific chain, as they have listed a 7.3mm for 5/6 and 7 speed and a 7.1mm for the 6/7 and 8 speed. Sram 8 chain is 7.1mm The link is cheap enough if no workee what are you really out. AFWIW, even shimano 8 chains are not all the same,as IG and HG are different widths.

Good point. So to put one of these things on, it's merely a matter of popping a couple of pins on the current chain to drop a link and snapping the new one on by hand, right?

Right. The link is composed to two outer plates. So you will be joining inner ones.
