Replacing handlebars - Bianchi road bike

Hi all,
I just purchased an older*(early 90s) Bianchi road bike, and I*want to replace the*drop handlebars with a set of café handlebars for comfort reasons. I would like to leave the brake levers and cables attached to the handlebars. Any tips or hints as I undertake this job? Things I need to watch out for when buying the components?
