Changing the cassete

So I have an 11-23 chorus and will be getting a 12-25 veloce (both 10 speed), can take out a cog from the chorus and put the 25 from the veloce (effectively getting an 11-25)? If the answer is yes, which one should I take out?

I have a compact crank so the effect is a bit noticeable.

What gears do you want? Also, how old is the Chorus? Conventional wisdom says that mixing and matching well-worn and new isn't a great idea.

Chorus actually is just a few weeks old. As to the question what gears do you want, I'd want to keep the 11 and get the 25. I'm not sure which one in between would be the least useful.

The small cog from the Veloce can be swapped into your Chorus cassette.
However, the large one cannot. This picture of a Chorus 10 cassette should show why:

Note that the four largest cogs come in sets of two, riveted together.

Just put on the whole Chorus cassette for races. (IMHO)

Use the top two from the Veloce cassette. Can you send us the listing of the cogs on each cassette?

Keep both cassettes intact and use whichever fits the ride.
I like tvphobic's idea, save the 11-23 for racing.
