Need some advice...Replacing some parts?
1. I need to replace my crank and need to know what size crank I need...
* Does this depend on my BB size?
* How do I find out my BB size?
2. I need to replace my front derailleur and I need to know, do I have to get a double?

Different cranks require different bb lengths. Find out what your new crank requires. Meaure the BB with calipers. Sometimes, it is written on the shell, so you could try taking it out and looking at it.
You need a double if you have two chainrings.

Make sure the cranks you are getting are compatible with your bottom bracket. A lot of cranks anymore require a specific type.

Can I use any double cranks for my eight speed or do I have to stick to a 8 speed specific crank?

No and no. You can use double cranks only if they are compatible with the bottom bracket, unless you intend to replace it as well. I don't think there is such a thing as an 8-speed specific crank.

Can any one out there verify that I wouldn't have to get a speed specific double crank...
