That 11-28 freewheel Harris sells
which is impossible to get in the UK. can i swap the largest sprocket out on a 11-34 to make my own?

No. Even if you can get an 11-34 freewheel (Shimano makes the only one in the world), that freewheel use a different sprocket design and "mating system" than any other freewheels out there. The only 28 tooth cog that would fit would come off the 11-28 you're having so much trouble obtaining! Sorry, it's a bummer, but them's the breaks.

the HG-50 cassette has no carrier and when you remove the pins you have 9 loose cogs. i also bought a 13-tooth shimano cog.
i dropped the 32-tooth cog and added the 13 and now i have 11-12-13-14-16-18-21-23-28.
i first tried adding the 13-tooth shimano cog to a SRAM cassette but it would not work because of the differing tooth profile on the smaller cogs.

what makes it impossible to get in the UK? harris' shipping policies? if so, do you have any friends in the US who would be willing to have it shipped to them and then ship it to you?

yeah, the $100 min order thing. plus i'd get shafted on import duties.
i'm gonna go with a 14-28 and a 52-42 and see how it goes.

Just a side note before you dive into a larger coq? You do know you will need a GT or Long cage derailleur? Also be sure to have a new chain.
If you kick over to a Friction mode system. You still will be able to find older Suntours in 14-34 5 speed and Suntour 6peed index 13-32 Winner FWs. Last and VERY hard to find would be a Sachs high end 11-32 7 speed Shimano compat index Freewheel. <-- this was the Last good quality one available. Watch eBay now and then. They do come along {yes you can swap these coqs around!!!}
