How much of the cassette can you use on the double?
On a compact double (50-34), how many of the cogs on the cassette can you use on a 9 speed when the chain is on the big ring? Small ring?
That is, how many cogs can you use without ruining the chain and/or chainrings/cogs or rubbing the deraileur?
I'm curious because on my triple, I can only use 3-4 cogs when the chain is on the big chainring and I can't use the biggest cog when the chain is on the middle ring.

You should be able to use all but the extreme criss-cross gears.

It's you! I used your gear calculator to come up with the gear ratios.
The below bolded gears are gears I'm able to use without any bad cross-chaining.

With a standard Campy triple and the correct length chain I can shift across all combinations...on the bike stand. On the road I typically use the middle chain ring with all the cogs on the cassette and on the large and small chain rings I never use the three largest nor three smallest respectively as a matter of practice. It won't hurt the gearing to go into all gears except the chain line can cause premature wear on the chani and chain rings.

I have a 50/34 and a 12-26 setup, Giant TCR2 9-speed setup. Without rubbing on the front derailuer, on the 50t chainring i can use the top 7 gears, on the 34t chainring i can use the lowest 6 gears (i practice though i usually only use the 4 lowest).

I don't have a compact but from reading countless forum posts I can tell you that it's common to have chainrub on the side of the big ring when the chain is running on the 34. This is partly due to the 16 tooth difference in chainring sizes and partly due to the chainline. If I go to a compact crankset I'll choose a 50-36 set because of this problem and because I would have much more use for a 36 than a 34. The chainline problem can be alleviated by installing a bottom bracket spacer between the BB and the frame.
