Setting up cables and wrapping the bars without the bike?

Setting up cables and wrapping the bars without the bike?
So I've had a frameset at the painters for quite a while now and am really short on time (full time job, 2 night classes, volunteering at a bike co-op, girlfriend ect.) and anxious to build it up. I won't have the time to do it all at once after I get the frame back, so I was thinking I could install the cable housing to the shifters/brakes and wrap the bars without the frame.
The plan is to keep the housing as long as possible and then wrap the bars. That way I can just put the quill stem in, trim the housing, install the cables and go. One less thing to do when the frame is here.
Does anyone see anything that could potentially go wrong with this, assuming I leave excess housing?
