Minimum width tire to fit on 1" rim.
I have a tandem, with 26" wheels with a 1" rim width. Presently, I have heavy 1.6" tires. I want to put on road tires, and these come in various widths, e.g. 1", 1.1", 1.12", 1.25."
Which width is the thinnest that will fit correctly?

Check on the manufacturer's web site. The manufacturer will usually have a recommendation. I just had a set of DT Swiss TK 7.1 rims built up for touring and they gave me a recommendation of a 700 25 to allow for proper seating of the tire. Since not all tire specs are exactly the same I am limiting my choice to nothing less than a 28. Good luck.

Did you measure the inner width of the rim to come up with 1". If so, see: https://sheldonbrown.com/tire-sizing.html#width (1" = 25.4mm). According to the chart, 1.75" is the minimum width, but it sounds like 1.6" has been working.
