Can I run a Campagnolo 53/42/30 CENTAUR crankset w/ a Shimano 10 speed drivetrain?

Would I be able to use this crank with a 10 speed chain and 10 speed 105 brifters? What FD would you suggest?

Yes, that combination should work fine. Use a 105 10 speed front derailler. The Ultegra 10 speed derailler will hit the middle ring on it's way to the big ring unless you position it excessively high (BTDT).

The fact that it is Campagnolo won't matter much, the issue may be if it was designed for 8, 9, 10-speed or what. Since it's a Centaur I think it's probably a 9-speed, do you know?
As for the derailleurs, you'll need a triple front and long cage rear. If you use a Shimano front derailleur I think a 9-speed Ultegra or 105 should work. These were designed for a 10-tooth difference between the big and middle chainring.

Al, the new 105 10 speed triple deraillers are designed for an 11 tooth gap (50/39/30 crankset) though I'm using one with a 10 tooth gap (52/42/30). It would be the best choice. 9 speed Ultegra or 105 would also work (from experience) but shifting won't be quite as crisp and those deraillers are more difficult to find these days.

But you're assuming it's a 10-speed crankset. I'm thinking it's a 9-speed with more spacing between chainrings. I think a 9-speed derailleur will be more tolerant to a mixed drivetrain with a 9-speed triple. The 9-speed Ultegra and 105 FD's were designed for 52-42-30 chainrings. If the crankset is 9-speed a Campy 9-speed triple FD should be the best fit but I know that a Shimano FD can work well with a Campy triple.

Have you ever measured any spacing difference between 9 and 10 speed cranksets? I only have a 9/10 speed crankset (Stronglight) to compare to a few 9 speed cranksets but the spacing there is basically the same (within the tolerances of setting up a front derailler for sure). The cage width on a 9 speed derailler is significantly larger than a 10 speed derailler which I believe is where the differences in shifting quality come from.

Good, but the current Campagnolo catalog does not show a 10-speed Centaur triple. joejack is right, go for a 10-speed 105 triple FD or a 9-speed 105 or 9-speed Ultegra triple FD or a Campy triple FD. Avoid 10-speed Ultegra FD or any Dura-Ace FD.
