Tube frustrations....
In the past three months I've ruined six tubes when removing the pump head from the presta stem. In the many years of biking I've never had this trouble. Essentially the stem tears out from the tube.

You could try lubricating the pump head or get some tubes with threadless valvestems.

Hold onto the valve-stem and gently work the chuck side-to-side and up to remove it. And smear a little grease or Vaseline on it before attaching the chuck to the valve.
