Wheel sets

I have a question on quality. I have two sets of complete wheels.

The first set: Araya rims RS 430 700c
Exage hubs FH HG50 on the back and HB RM50 in front
Needs a few spokes replaced and truing
Off of a 1994 Bridgestone RB-2

The second set: Mavic MA 40 rim in back and Araya CH 370 in front
both have Shimano Ultegra 600 hubs
True. Needs new tires
Off of a 1991-2 Bianchi Limited

I am trying to fugure out which one to put on my Miyata 1000 touring bike. I am still learning the component hierarchy. Which set is beter quality?

New or used? Condition of hub? Condition of rims? Spoke count? Why does the first set need spokes replaced?

Hello. could the frnt wheel from the Bianchi be a ctl-370? if the rear hubs are both 7spd I would use the ultegra hubs for the Main wheelsand the exage hubs for spare wheels.
there was no '91-92 Limited. 89 was last year for the limited for awhile. the 600 equiped bike was the Virata from '90.

Both sets are used. The rims seem to be in good condition and the hubs both seem to be in good working condition too. The exage hubs do have oxidation and the a few of the spokes are bent. The 600 look new. Spoke count is 32 I think. Is that important? Is there a better spoke count for a particular purpose? Thanks!

Thanks for the info. I am pretty sure the wheel is a CH. I'm still trying to pinpoint the year the Bianchi was made. I dated the Ultegra components to 91. I will post a picture in the vintage part of the forums later.
