Headset crown race

I am looking for a headset for my 1990 Trek 970. The only part I really need is the crown race. The headset that is on it is a Shimano Deore. My LBS could not find a Shimano headset from their suppliers so they sold me what they said was a cheap one. The cheap one is a Tange-Seiki TG-235 and the size is marked 30 27. This does not mean much to me. This is a threaded headset by the way. I would like to find just the crown race for this Shimano headset but if that fails, what do I ask/look for and what would be a good middle of the range ($) headset.

The 30-27 designation would indicate that the headset is a JIS standard. (30mm cup sleeve diameter, 27mm crown race diameter) I'd be very surprised if your current headset is not ISO standard so you will not be able to use the headset your LBS sold you, even just the crown race.
Shimano headsets aren't that difficult to source. Another common choice would be a Ritchie or the correct size Tange.
I wouldn't have a lot of confidence in your store.

I would not hold your breath in hopes of finding a shimano forkcrown. shimano does not like to keep spares around for long, not that anyone else does these days. the Ritchey is your best bet. IMHO

What do your bearings look like?

If they are in an open retainer, PM me your address and I'll mail you a 26.4 mm crown race. If the bearings are in a cartridge, they need a differently shaped crown race.
