cantilever housing stop on rear of bike
With the rear housing stop for the rear canti what kind of brake barrel adjuster should be used there? I noticed that the stop is not threaded like my headset stop on the front of the bike and was wondering if any random barrel adjuster can be used...?
Most of the barrel adjusters I have will slide into the stop about 1/2 way, but no further.

I'm not sure why an adjuster would slide in only half way since they the threaded section isn't tapered. If you mean it slides the threaded section slides in up to the head, that's fine. Use a nut as the stop/adjuster. If it stops about half way because of some kind of taper or burr in the housing stop itself, see if you can enlarge the hole enough for the barrel to drop through cleanly.
If the Stops ID is too small and will only accept a ferrule, either put an in-line adjuster up near the levers or, if possible, replace the hanger with one having a built in adjuster.
It goes without saying that if you're using Mtb style brake levers that have an adjuster, you don't need another one.

Thanks for you advice FB. It is a surly LHT, so maybe it is only intended to be a ferrule stop. I think that might actually be the case because the bottom of the stop itself only has a small hole for the cable to run through. I may run try to just use one of my old barrel adjusters in there to see if it works....I want to avoid in-line adjusters if possible.
And yes, I'm going to use a standard road drop bar....otherwise I'd probably use flat bars and v-brakes
