I've got a Breezer Citizen that I'm having difficulty stopping. It's got 26-inch wheels and cantilever ("V") brakes. I know how to do brake cable adjustments and I've also had success in pulling the wire and tightening things up that way. (Not familiar with the terminology, sorry).
Anyway, after several thousand miles I'm certain I need new brake pads and going to the LBS is such a time suck that I want to order some online. My current pads are Tektro something or other; I can't read the number. They're held into place by a nut or bolt that is tightened/loosened by an allen wrench.
I just want a couple of brake-pad pairs that I know will work with my wheels and brakes. Links appreciated but not necessary.

It's as simple as searching for v-brake pads (Performance Bike, Nashbar, Niagara Cycle Works, PricePoint, Universal Cycles, AEBike, etc). I think the only thing you need to look out for is that there are two different ways to attach them: threaded and post. With threaded pads, the shaft perpendicular to the pad is threaded and has a nut on the end, and with post pads the shaft is not threaded but instead inserted into a hole in the brake (the tightening nut is on the brake, not the pad in this case).
Here are some pics to compare to the ones you have.
