Can I convert Disc Brake Wheels to be used on V Brake bike?
I have a Klein mountain bike which is equipped with V-Brakes. I am looking at replacing my wheels but general selection of V-Brake wheels is not too great.
Can I buy wheels that are for Disc brakes and make them work on my bike?

Bikes: too many bikes from 1967 10s (5x2)Frejus to a Sumitomo Ti/Chorus aluminum 10s (10x2), plus one non-susp mtn bike I use as my commuter

Don't look for V-brake wheels per se.
Rim braking remains the most common arrangement, and depends only on having a rim with braking surfaces, which most do.
People market disc brake specific wheels whose hubs can mount a disc, and the rim may or may not have a braking surface. All others, not sold as disc (or fixed gear) wheels are for use with rim brakes and will work with your V-brakes.

Agree, don't restrict your search to just v-brake wheels; a disc hub gets laced to all kinds of rim-brake-compatible wheels (Sun Rhyno Lites to Deore disc is another, just bought a set of them for my sister's bike, $110 shipped). People, supposed 'experts', used to discourage the practice, because you'd be rolling extra, unnecessary weight (?!?) if you didn't MOUNT disc brakes. Hell, if you're not racing, what's the concern? Take a dump before you ride, you'll save more weight than any upgrade!
