Another rim size/tire size question (Ukai 26x2.125)

Another rim size/tire size question (Ukai 26x2.125)
I have a set of pristine wheels from the early 80's with Ukai 26x2.125 rims. They look very similar to the rims on this Ritchey (thanks First Flight)

I want to install slicks or semi-slicks on the rims for street/road riding. The largest slicks/semi-slicks I have found so far in Japan are 26x2.00. Will that size tire fit those rims or do I have to use 26x2.125 tires or larger.
Just looking for a little input before I head off to the LBS this weekend.

They would fit but you would probably be better with 26X1,5. 26X1.25 would be too small. The inside width between sidewalls determines the width tires you can run. 1.5 to 2 times that width will fit. AndrewP, thanks. I've alreadey read that article and looked over that chart, which is the reason for my question. Sheldon warns about putting a narrow tire on a wide rim, and I was wondering whether 26x2.00 tires would be too narrow. Seems like they wouldn't be, but I just don't know. Are you sure I'd be better with 26x1.5 tires on 26x2.125 rims; 26x1.5 tires would seem be a little too narrow to me. The inner rim width of my rims, measured very inexactly with s metal tape measure, is approximately 28 mm.
