Chain Tension
After receiving my bike from CC today, I had to install the handlebars, seat and wheels to the frame. After mounting the rear wheel and attaching it to the cassette, I shifted through all the cogs without issue. But the moment I hopped on, before even pedaling my chain dropped. Is this a chain tension issue? If so, how do I know if there is too much slack? What else could I have possibly done wrong?

Where did it drop? Most likely its not chain tension, but a front derailleur adjustment issue.

This is a bike with gears, right? I assume it is because of the mention of the cassette. I've never seen an issue of not enough chain tension on a derailer bike, unless you're running the small-small combination and the chain is hanging slack (you should never use this combination anyway.)
Did it fall off on the front or back? Sounds like one of your limit screws is set incorrectly.

This is for my Ridley road bike w/ Rival components. It dropped from the front chain ring. I looped it back on and cranked the pedal by hand, shifted through the gears like before with no issues. But I want to run things by you folks before I head out on the road and have it drop again.

There are more things to adjust on a front derailer than a rear. Read this: https://www.sheldonbrown.com/derailer...ent.html#front

Compact crank? Even not, if the top run of chain is slack (as can happen when a new free hub drags a bit due to all the grease in it), the FD can throw it off the inside of the small ring. A chain catcher can prevent this from happening. I use K-Edge and it works a treat, but there are others.
