Craptastic Shimano 5700 105 rear shifting

Shimano 5700 105 rear shifting == AWFUL
I bought a new cyclocross bike with Shimano 105 (5700) long cage triple and the rear shifting is the worst of any bike I've ever owned (I've owned 105, ultegra, and dura ace and all were fantastic)
It's as if the indexing isn't quite right and it wants to be too far to the extremes (too far from the wheel when in the small cogs, and too close to the wheel when in the large cogs.
I've tried the following:
- Straightened derailleur hanger
- Replaced rear derailleur
- Adjusted cables to be as smooth as possible and use aluminum caps
- Had it to two mechanics
- Talked on the phone to shimano 3 times
Shimano says: "It should shift as well as dura ace. You probably have a cabling problem. Upgrading to Ultegra won't help."
Mechanics say: "It's Shimano 105 long-cage. This is what I'd expect.. it's not dura ace."
The mechanic cranked in the b-limit screw so the derailleur was really far away and it got better. But then shifts were sloppy in general, occasionally skipping a tooth on the shift. I can't ride the bike like this.. it's driving me nuts.
Has anyone else heard of this? Any ideas whether upgrading will fix it?

If you needed to straighten the derailleur hanger, sounds like your bike has more issues that the RD. As it's new, sounds like the whole bike needs to be swapped as a warranty issue.
For 5700 not shifting, I'm currently running 2 bikes with it, one short and one long cage, both work perfectly, and the short cage shifts better than it did with the 7800 which it used to have.

There is nothing inherent wrong or weak about 105 long cage derailleurs so your problem is elsewhere and you need a different mechanic. What cassette are you using? If it's an MTB (like a 11x32) then you have exceeded the derailleurs capacity. If, as jimc101 noted, you had to straighten the hanger, you've got other problems too.

Not to be accusatory, but if the same mechanic who said he'd expect it to not work great because it's a long cage 105 did the hanger alignment and the re-cabling, maybe that's the problem.

What the OP did not state was whether or not the rear wheel was properly dished...
BEFORE
...checking the rear derailleur hanger alignment.
Then using a straight edge ruler verify that the center of the chainring set (middle ring of a triple for example) is in direct line with the middle of the rear cassette.
Once that is done - then proceed to housing, cables, adjusters, etc.

Sounds to me like you need to take a close look at exactly how the cable is clamped on the derailleur.
Get it wrong (and it can be ambiguous), and the derailleur's actuation ratio goes out the window. Intentionally clamping it wrong is a method to make some incompatible components play nice together...

Shimano states the largest cog supported at 28. Some have made it work with larger because their bikes may have had longer RD hangers. There are many who tried and failed as well. You may need to try a 9spd Mtn type RD in order to get the shifting to work well with larger cogs. I've used Deore RDs in similar situations to get bigger cogs to work.

Am I the only one not missing this bit?
Short cage, long cage, MTB or road derailleur, it's irrelevant. The derailleur is moving too far with each click.
Ergo, the cable is incorrectly clamped. Or the cassette doesn't match the shifter, which I think we can rule out.

Going that the OP said that the bike was new, the assumption has to be made that the manufacture spec'd parts that match.
The OP really needs to take this back to the shop where they bought it from, of if they got it from a direct supplier, find another bike shop who know how to fix bikes, not one that just say if it isn't Dura Ace, it's rubbish.
Would suspect that if not a defect issue, like the frame,but it's all setup. But the OP seems to have had a lot of work done, so with out getting it hands on, who knows
