I have an apollo fs 26se, the back brake is quite a problem along with many other issues but for the time being I just need to remain focused on resolving this problem.

As you can see from the pictures, the cable is quite loose running from the lever to the disc brake through the middle of the bike... I cannot see how to tighten this, I have also circled on the picture of the disc brake where I cannot adjust this as turning the allen key does turn around but the bolt has got stuck on the other side so isn't moving.

any help would be greatly appreciated as my bike maintenance experience is as a beginner.

You need to get the bolt you have circled undone, unless you can do this, you won't be able to adjust the brake.

To adjust, loosen the bolt circled, pull the cable taut and do up bolt, this is the initial setup, then it will need minor adjustment for pad clearance.

You will also need cable cutters to cut off the excess cable, a cable ferrule to cap it, and something (like pliers) to crimp the ferrule.

+1, the process begins with pulling slack out at the pinch bolt (circled). I can't see form the photo, but it's possible that your brake uses the allen key to hold the screw while the nut on the other end is loosened. In any case you have to figure out this detail, free the wire so you can pull it down and reclamp it.

Then fine adjustments can be made with the rotating fittings where the housing ends on either the lever or at the brake (you have 2 adjusters).

If you still cannot get the pinch bolt loose, post a picture from the opposite side, showing how the wire is held.
