I started out using a Ritchey Torque Key for stems and seatpost clamps on carbon bars and posts. 5nm---I never got into any trouble at all. I still use it most of the time, it's just too quick and easy.

But, I agree with Hillrider and use the torque wrench for BB, cassettes, crank arms and things that usually don't get tightened enough (my experience) by guessing with a plain ratchet.
