2005 Ultegra 10 Speed, chain advice please

First post here, i'm UK based, periodically do some big rides with lots of big gaps of just eating doughnuts and drinking beer!
So I have a 2005 Trek 1500. It was the first year of the 10 spd Ultegra. I'm a little mystified by which chain I need. It looks like the CN 6600 was the original spec, but there's a 6700 and 6701. Can I use any of these chains? I assume the later ones are just a redesign/better spec?
Sorry if it's a simple question, I've googled it but not really found a definitive answer,

Any 10 speed chain will do, plenty of options from both Shimano, SRAM, KMC and others. If you are looking to replace you chain, what condition is the cassette in? does this also need replacing?

thanks. Sorry I should have mentioned I just fitted some new wheels and cassette. Kyserium Mavic's I think they were. So just a chain would be required.
