sealed refers to the bearing, or as you call them "things". it means that your bearing are sealed in a casing. this prevents dirt and grime from entering the bearings. they are also smoother. they will require less force to turn.
in peddles i do not see where it makes a difference. in wheels and cranks you definitely want sealed bearings. also make sure you get a good sealed company, i got poverty sealed hubs and they SUCK! (fyi)
hopefull this helps you understand the difference between sealed and not sealed.

Often it refers to the use of industrial sealed cartridge bearings. These are sealed against the loss of grease in high-speed applications. They are used in bikes, and the seals are only partially effective in keeping stuff out. On any bike brearing system, cartridge or cup and cone, you would expect some kind of seal, eg a silicon O ring or a plastic ring.
Pedals are exposed to a lot of crud, and some kind of seal is always useful.

sealed bearings are stronger then conventional bearings, and they stay smoother longer. sometimes they are slightly heavier. they are much stronger then unsealed, especially if you get sealed bearings that use those needle bearings. BTW in your signature it says you have a dk eight pack and that you have profile euro cranks...? how?
