What do you think this is worth today? Saw this on craigslist for $600. Good deal?

Sounds about market value to me. I guess it depends where you live. In my area, once you get over the $500 to $600 mark, bikes just don't sell. But as a keeper, if it fits and is what you want, there is a lot of value there. For a third less than a new entry LBS road bike, you are getting a full Ultegra bike. Make sure brifters are working well, as the bike is old enough and has enough miles on it, that they might be (or probably are) nearing the end of their life. Replacement nine speed brifters (Tiagra) will cost you about $250, plus installation of course.
Personally, I would adjust the price mentally by $250. So if I paid $600 for the bike, I would assume I really paid $850.
I have two bikes with nine speed Ultegra STI right now. One is shiftiing a bit on the sketchy side (I have a set of Tiagras on hand to replace them once they die).

STI does not have a long life, but maybe an ultrasonic cleaning might help...? See the ultrasonic thread.
Anyway, values right now are in the dumps, vacation, economy, take your pick.
I saw a 55 cm Grandis on ebay, $350 buy it now or best offer, sold for $275. !!? It was drivable from me, and he would do local pick up... I don't have the cash, but if I had been hard hearted enough to offer $280. maybe it could have been mine, a tremendous value even though I suspect it was repainted. It is bleak out there.

I have a couple of super nice bikes that didn't sell this spring.
I decided to hold onto them versus giving them away.
Two of my wife's friends are using them at a triathlon this weekend, so at least someone is enjoying them.
But, yes, there are incredible deals out there right now.

FWIW: Values have been pretty solid for me this year, pretty much in line with last year. But I am in a lower market than some others (the $175 to $300 market usually). Sales volume (number of bikes) is in line with last year as well. The modern stuff is selling better than the vintage stuff. The response for my vintage stuff is down.

Sometimes it gets hard to explain why they are such great bikes if the buyer doesn't already know what is special about the bike.
One of the main reasons I stopped buying a month ago.
