Valuation needed, '87 Trek 560 Pro Series
Picked it up at the Madison swap meet a couple months ago. Had full 105 but godawful wheelset and badly chipped paint (orange/red fade)
Upgraded the shifting to Suntour Superbe Pro w/ Command Shifters and a Winner Pro 12-24 7-speed unit; upgraded the wheels to Cyclone hubs in Mavic GP4 rims with a mismatched set of tubulars (Conti front, Challenge rear); fully polished the crankset; had the paint color-matched, filled and spot-painted the nicks (if you look very closely in good light, you can see where the paint doesn't quite match), it's a 3-foot paint job, good decals, I'd give it 8.8/10.
Overhauled all the bearing surfaces, polished the stem, re-wrapped the bars with Fizik cork tape, gave it an old Fizik saddle in good shape, installed Reelites, and I'm using a pair of long-quill road pedals with toe clips.
Need a decent consensus on fair market value for insurance purposes.

I've sold a couple of 560's for around $300 in the past, in excellent, all-original condition.
Treks are highly sought after in my market, but I still think your market would command even a bit more than mine.
The upgrades you mentioned are nice, but typically do not add value over what the original, correct components would yield.
Mismatched tires are a bane on presentation and resale value - as is ANY paint repair, but I would not think these things should affect insurance value (i.e. "replacement cost") because after all, you are the one paying the premiums and would have to GFAO (go find another one) if something happened.
