Somewhere here on C&V there's a really long thread about vintage frames with modern groups.
My first Mondonico was about 1984. I bought it used from a penniless grad student (about $650 in 1986) in Denver who had bought it new but had the shop put on 600ex 6207. After a while I realized I'd never really like this bike with that on it (see the "Why the hate for arabesque" thread), so I started replacing with NR. All good, but then I got a good deal on Campy 10s. That made this bike work really well.
Personally I don't think there's anything wrong with building out of period or out of heritage, or even mixing and matching as desired or as opportune. Think of what you want or need for each part, and make it that way. If something doesn't work out well, chatter at the list about it and you'll probably (eventually) find someone who can tell you what's better. It's a great old frame, but ultimately it's made for riding, and riding hard.
Another of mine is my bought-new 1984 Trek 610. Due to a frame problem requiring a repaint, it is not as new. What's different? Custom low-trail fork designed to maintain fork height, 700c wheels (Shimano 6207 hubs with Mavic MA-40 rims), Mafac caliper in front, Nitto bars and stem, Campy Chorus sealed headset, first-gen Chorus crank ($25 on Ebay but the BB was three times that), early '60s Huret front mech, Huret DuoPar rear mech, cheep high-setback seatpost, and Selle Anatomica saddle. It rides very well now! Wife wants me to get a Campy group of some form for it, but I really like all that freaky old French stuff. Two things are original: the 6207 rear brake caliper, and the original Shimano friction shift levers. Oh yeah; while I like the 6207 toeclip pedals, on this bike I prefer a pair of vintage Lyotard Berthet pedals with toeclips.
