what's the biggest tire i could conceivably run on a Dx-6000 with stock wheels?

Probably 28's at max. Gonna go check real quick...

I can see roughly 30-32mm between the chainstays in that area. So, yes, a 28 at max, unless a 30mm is made (doubt it) and for that, your wheels would HAVE TO BE perfectly true and centered. And also that said tire isn't lying about it's actual size. Some 32's are only 28-30mm sometimes, while some have seen 28's that were actually 32's.

I imagine whatever size rim you have. Either 700c or 27". If you're asking what the widest tire would be, I have not idea.

would 28's get me through a crushed gravel surface top? we have the towpath here and I'd like to try riding from my apartment all the way up to cleveland along the towpath

I don't think you'd have a problem on most gravel, but it really depends on the gravel itself (size and packed or loose.)
I ride the wite pine trail pretty often using 27 x 1-1/8, and 700-23. The trail beyond sand lake is ballast gravel up to 2" size crushed, but mostly well packed, and it's pretty easy to maintain 16 to 18mph on it
My view is that if you can make it down a gravel road alright, the tires will work great on crushed gravel paths. (nothing realy works well on round river gravel)

now i know this may be blasphemy, but i'd like to try fitting a rack to my dx-6k. it's my only bike and sometimes i'd like to be able to carry stuff with me. i don't really have much room under the seat (the frame is a tad big for me) so i'm not sure if a seatpost clamp rack would work. since i don't have eyelets on the stays do i have any other options?
