Repainting with non-oem colors

I know for sure that repainted classic cars tend to lose value when non-stock colors are used.

All things equal, are color changes on classic frames undesirable? I for one don't think green has ever been used enough on road bikes, and I'm repainting my Bianchi Strada a very normal shade of green.

Does the value of the frame/bike have any bearing (more acceptable for lower end bikes)?

I think it has much less bearing on lower-end bikes. As I'm sure you're aware, with Bianchis in particular, celeste seems to bring the most money - not that you're necessarily going to get your money out of a repaint in any case. Depends.
For an upper end bike, non-stock colors can affect value. There are some bikes, though, where a wide range of colors was available originally, in which case it may matter less.
Bianchi actually used a rather nice medium green (emerald?) during the 1960's in particular. I've always been partial to that color.

I think that repainting a low to mid range bike is more 'acceptable' in the sense that if it were mine I'd have fewer qualms about doing so.

A high end bike that has been repainted is no longer stock no matter what color you spray it IMO. Stock color or non-stock color doesn't matter. Personally I think that if you're gonna go to the trouble of repainting a bike you should do it in whatever color makes you happiest.

Personally, I really like green. Especially dark British Racing Green.
