not really. Brakes are Brakes...they aren't made for 700c or 27" specifically...what you need a brake caliper with a "long reach" like these https://www.velo-orange.com/ter5exlorebr.html although these are really long and might be overkill for your situation

You're pretty close to making it/not making in terms of brake reach with whats on there... it might reach down to 700c rims...its only a few mm difference.

Thanks for the warning about newer components coming............I suspect brifters and maybe an ergo bend bar and maybe a riser type or non-quill stem is on your list of stuff to install on this bike then? Yes, for some it will look like the newer stuff will alter the clean, classic lines on the bike, but if it works out for you to get the most enjoyable riding out of this bike, then more power to your project! ..........Just please don't start cutting things off the frame as kittens will scream with pain!

there is no such thing as 700c brakes You need brakes with enough reach so they hit the 700c rims' braking surface. Try the ones in your bin with the longest reach

can I assume this one is something better given the interest?
Close but no cigar The one on this KHS is either a Campy NR or SR (need closer pictures to tell)

my guess was gonna be Shimano 600 or early Dura-Ace on the cranks

OP's crank:

NR crank:

SR crank:

600EX crank:

DA crank (71xx):

Notice the difference on the spider: Both the SR and NR cracks, have that pyramid shape at the ends that the Shimano cranks (and the Campy Crand sport, btw) do not have. The rings look SR, but hard to tell NR from SR crankarms from a distance

No way! I put wider bars on, but they are the "classic" curve. I don't even have brifters on my newer bikes, too high maintenance, but I may switch the DT shifters for bar ends... I have a thing for bare end shifters. I'm scouring eBay for a rear derailleur that matches the groupset, so really the only new bits are going to be the SPD pedals and a computer probably. Those vertically routed brake cables are too sexy to mess with
