Which is more Rare/ Valuable campy Sherrif Star or campy High/low flange Hubs??
So i picked up a bike that has a rear wheel hi/low flange hub. Ive heard these were rare. Havent seen any on ebay lately. The sherrif star hubs are more recent and always command around 300.00 on ebay-or more. which is thought of as being more desirable/rare/valuable in a general sense?

Because of the esthetics, Sheriff's star, IMO. The Hi/Lo is more of a curiosity.

Most likely true.
Spoke count can make a difference.
For equal spoke count the C Record will attract more interest.
I am going to have to build my C Record parts up onto a frame, save for the brakes, I have to decide on what to do for those, I have ONE Colbalto, ( I don't remember how I got that, it was decades ago) which I always thought of as silly, and just never found a cheap pair of Deltas. Maybe just go 2009 Centaur, reasonably cheap and nice power and modulation and they kind of extend the aesthetic.

I'd think the sheriff stars more rare.
The high-lows seem rare, but they're around; I have 3 pair; from the early 70s I believe. Never very popular.
