I'd just reuse everything, redish the wheel and buy a freewheel cog, either a 20 or 21T, and go ride. Take the inner chainring off and if necessary to get a good chainline, move the big chainring to the other side. Will need shorter bolts if you remove the inner ring. You could also buy track cogs and give fixed gear riding a try.

You could go with black bartape and the CaneCreek levers, maybe get a black Brooks saddle.

Is that a freewheel hub or a cassette hub?

If you want to do a fixed/ss conversion your best bet is finding a flip flop (fixed/free) rear wheel and just use that. Spacing and redishing a rear wheel is a pain to do and really only works okay. If fixed is really in the plans a true track hub is the best bet. You can sometimes find a used rear wheel for not a lot of money without spending for a new pair. That way you keep the stock stuff still usable in case you wanted to build it up on another bike.

and color always black! Black goes with everything. Color matching often can be great, but if the colors are a little off it looks like crap.

Shimano WH500 wheelset is really really inexpensive. Spacers for getting a chain line are easy to get for the free hub (plastic and light) and Shimano cog sets (at least here) come as three sizes in a pack. Then you have an SS which is cool for commutes (IMHO). 110-120 pounds in the tires. A Corsa seat would be cool. Repair the chips and rattle-can a clear coat. Reuse everything else. As the man said, you may need a bolt set for the spyder. Hell ... what am I saying? Those are Mavic with early C-Record hubs right? Re-dish the wheel, even if you have to get a mechanic to do it. Buff the daylights out of the alloy. Show us later whatever! My 2-cents — black does not go well with that shade of blue. Please don't saw off any braze-ons!

I adore this shade of blue. The patina is perfect. The wheels are actually bronze Araya 700c with sealed Suze bronze hubs. Not really the pedigree of Mavics to C-Record but the WH500 are interesting... No braze-on's will be hacked (it's already been through a rough life of this) but I just want the bike to pop and look classy. What components would compliment this shade of blue?

Already used shorter bolts (crank was a 2 chainring Superbe Pro but now can only sport one). Can I add spacers to the track cog so I can keep the chainring on the outside of the crank?

At least with those wheels, no. You'll need all the threads for the cog and lockring.

I think the bike looks good, but if you're bored, maybe try some yellow, red or orange bar tape.

I like the color too. Do you mean the Araya rims are bronze color? If so I 'm even more convinced that the components should stay polished alloy and the trim stuff — straps, tape, maybe cable sheathing — should be a dark or navy blue.

I am building a blue bike with chrome stays and forks. I've got blue tape and straps for it. It isn't a hipster combo — it's classic elegance. At least that is what I hope to achieve. And I see the same for yours. Your saddle should stay black — or natural hide which usually keys onto anything. Cleaning up the white hoods and reusing them would be OK. Black tires. IMHO don't clutter it. No hipster dazzling chain. But an Izumi Pearl silvery gold track chain would key onto the wheels.

We all have our own imaginations to follow. Mine may be pretty conservative.

You have good taste. Maybe I can look for a honey leather saddle and shellacked bartape. The Gran Compe levers look pretty cheap (the levers themselves are painted white) so I was considering the Superbe levers but non-aero are pretty uncomfortable.

Silver/gold chain....mmmMmmmmmm...

No contest! Order some Shimano BR-400 levers. Yes there are lighter sets, but these are extremely efficient aero levers with an integral return spring. Very good quality gums. And they are NOT expensive. In fact they were so cheap at my LBS that I had to ask if the marked price was for a pair, or a single lever. Both my Trek 560 and my Vitus 979 type mount these levers, and I've not regretted it for a second.
