Squirtdad’s Jambalya
Ingredients:
• 1 lb smoked sausage (Kielbasa preferred) cut in ½ “ slices
• 1 lb Ham cut in ½ “ cubes
• 2 medium onions, finely diced
• 2 medium green bell peppers, finely diced
• ½ large bunch of celery finely diced (2 cups)
• 2 medium tomatoes, chopped
• 1 cup tomato puree
• 7 cups chick or fish stock
• 1 tsp ground oregano
• 1 tsp ground thyme
• ½ tsp ground basil
• ½ tsp white pepper
• ¾ tsp black pepper
• 1/8 to ¼ tsp cayenne pepper
• 1 ½ cups raw rice
• 1 lb peeled and deveined raw shrimp
• chopped green onion
Cook sausage 5-10 minutes, stirring often. Heat on high!!!
(Note: heat has to be high, throughout the recipe things are going to stick to the bottom of the pan. There is going to be charring and smoke. This is important to the taste. Trust me and leave on high until told to do otherwise. Stir and scrape the bottom of the pan frequently.)
Add ham and cook another 5-7 minutes
Add onions, celery, and green peppers (called the trinity in Cajun cooking) and continue cooking on high, stirring and scraping until the bright green is gone. Add the chopped tomatoes and cook for 3 minutes. Add tomato puree and cook for three minutes (stirring and scraping). Reduce heat to simmer.
Add broth and spices. Cover and simmer for at least an hour. Stir occasionally and scrape bottom of the pan. Adjust seasoning.
Add Rice, stir, cover and cook for 15 minutes. Add Shrimp, stir, cover and cook for 5 minutes. Serve immediately, garnishing with the chopped green onions.
Note1: Seasoning: This is spicy, hot and supposed to be. If you are not sure of the degree of spice, start with lesser amounts, taste and add as needed. The best bet is to reduce the amounts of white, black and red pepper, not the other spices.
Note2: This is easy to vary, Like Crab? Throw some in. Chicken? Throw some in, you get the idea.

So you place a WTB. And you get a response. "I have them. Will send pics when I get home." And you never see the pics and they never respond to any queries. Guess I didn't need them anyway.
So you sell an item. Ship it promptly, provide a tracking number. You know it has arrived. But you never hear boo from the buyer that all is well. Guess no news is good news.
So you buy an item. Seller agrees to a price. And then the seller decides he can get more for it. Know I did not need it from that guy.
So you help a guy out. Send them something gratis...not even shipping. They know you gave it to them. But never a simple "thank you". Know you will never get anything from me again.

How about a much smaller "assist-only", spark-ignition motor that fits in front of the bottom bracket? And with a freewheel on the rear wheel?
Seems this could be light and gentle enough to put on even a modern road bike, without messing up the bicycle's function.
Maybe we'll just have to wait for still-better batteries and a tiny motor that resides under the bottom bracket, but that might mess with big oil's primary intended function (to force the oil-dependent nations deeper into eternal debt slavery).
