great trek, i have one myself, they are common drop bar conversion bikes, do you know what year yours is? if you are going to put drop bars on it, think about maybe bar end shifters or some brifters on it, you could probably find some on ebay for around 80-100 bucks, not a cheap conversion. also you will need a new stem to fit the drop bars you choose.... vintage-trek.com will help you date your bike..
you can jump up to a 24speed if you have a 7spd cassette in the back, just swap it out with an 8spd, and switch to a 8spd shifter in the front.. since your converting anyways

Gouge Away
Nice bike. I have a '90 750. The 750 has the same geo as the touring 520. Not really sure what you are asking. Are you wanting to make the front a single gear? If so this can be done, but not sure how well the chainline will be. You might need another set of chainring bolts. Going to drops you will need the bars and maybe a stem. The brake levers and shifters will not fit on drop bars as the clamps are different sizes so you need to replace those. I did a drop bar conversion on mine, but have since turned it back to its roots. Not great pics, but here are a couple of mine with drops.

can't beat stock, im trying to get mine to feel right, it just feels stiff.. i had a 98 700 multitrack that i loved, but this one feels too much like a mtb, i'm guessing because of the flat bar

I converted my 790 from the flat bar to a drop bar with bar end shifters, but ended up changing it to a mtn bike riser bar with rapid fire shifters and have liked this current setup the best.
Don't be afraid to experiment around with it. You'll find a setup that you like!

I see that this thread is more than a year old, but anyway, here's an idea. Take your stock bars, remove shifters and brakes, flip the bars over and put it all back together. You get a usable drop, it looks cool, it's subtle and your bike is original.
