Two of these* I already have and is making my C&V experience the best that it could be! thye hunt continues for the other two. Maybe I can still find and ride them before I die!

I really enjoy the bikes I've got right now and could easily never add another without losing a minute of sleep. That said, I'd be very interested in a Toei or a Jack Taylor, very different but both are intriguing to me.

Condorino bars with an integrated stem. Condorino because they are narrow, easily integrate brake levers and looks cool. I can route the cable through the bars, into the stem, through the frame to the disc brakes. I would make custom rotors because I can, I want a certain look. The integrated stem would also contain a head light and electronics so I can dock my smart phone.
There will be a custom pcb to control lights and an on-board battery pack (in the seat post, maybe). I'm thinking an electronic di2 Alfine. Not so much for where I live now, but for where I live in the future, I may want the gears. In addition to the head light, I would put front and side-facing blinkies in the fork. I'll do the same in the back by integrating blinkies in the fender.
A rear rack for going to the grocery store. But the 1930s geometry will accommodate an integrated lock in the rear seat stays and a "tool box" between the rear fender and seat tube. No front rack to begin with, I don't like the weight up front.
Clinchers because I want a minimum of 32 mm, 35mm tires being ideal.
I am also thinking a belt drive put I am not 100% convinced.
Stainless because like a monkey, I like shiny things. Also, it requires little maintenance. And I am thinking about a variation of a cromovelato finish, but mostly bare stainless.
As for the builder, Wages would be cool but I really don't care. I just want the bike I want.
I'll post renderings sometime (a long time out) in the future.

I recently found what I consider a grail in the 1951-52 Cinelli I just got. I didn't know what I had till it showed up and I saw exactly what it was. I am an ardent fan and collector of Cinelli Super Corsa's and this one, with the age and the fact that it came with a derailleur of which less than ten are known to exist made it pretty much the ultimate find for me. That said, while satiated now, I will be back looking for another bike sometime in the future.
The other bikes I want are an Ephgrave with #1 lugs and a Rene Herse racer from the early fifties. I also want a lever shifted Cinelli someday, its really all I have left to look for as far as Cinelli's go. I hope that when the next one goes for auction IAB has already found his.
That said, all the previous bikes are attainable with patience and money. The bike I want and will be looking for maybe forever is a truly rare maybe non existent one. There were reportedly ten of the prototype Campagnolo Gran Sport derailleurs with the twin cable actuation that were shown at the 1949 Milan bike show made. I would like to find a bike that has one of these derailleurs on it. I also could not afford to pay what that derailleur alone is worth so I need to find it in a situation where only I know what is being sold. I think this is going to keep me surfing eBay for at least the next few decades.

I think my tastes lean pretty heavily to the British end of things since my collection is dominated by them...
Built one... my P20 touring bike ("Forrest")
From the first time I rode a Moulton I knew I needed to have one... it has become my daily driver when the weather is nice and spoiled me for wanting anything else.
There are many bicycles I have that I adore because of many things... some of them have a lot of miles and we have a history together and I would not trade them for anything.
My 1955 Lenton... not as easy to find as a Moulton.
From here on in any new bike I get will be built by myself save for the recumbent trike I plan to pick up in the spring although that too may serve as a template for a future custom build.

As far as road bikes go... the Ron Cooper keeps my eyes from wandering. It is a little plain looking (as many racing bikes are) and well ridden but is absolute perfection on the road.

I'm simpler, cheaper than most. There have been the Campy grouppo Bianchi's and Treks that have been on my shortlist but nothing can move the C-Dale SR700 Black Lightning off my grail status search.
