New Old Stock. That means new, not "like new." NIB means New In Box, NIP means New In Packaging.
And "new" means unused. NOS is often added on ebay listings for something that's really in good shape, but not new.

NOS is a term used by many ebay sellers to mis-represent their used parts as new old stock. True NOS can bring 5X to 10X what a slightly used part can bring, so the temptation is great.
And for some reason, many people with used vintage bikes are attracted to NOS parts for their builds. Of course, as soon as you mount the part on your bike, you take a 80%+/- loss in value as guess what, your part is now used.....
The one thing I really like about NOS is it attracts a lot of bidders, so the parts I buy (not NOS) can sometimes be a nice deal.

A NOS (new old stock) part would be a part that was manufactured during the original production run of that item and never used. It may or may not be in original packaging but if there is any sign that it has been installed or used, it's not NOS. If it were manufactured after the end of the production run it would be a re-production.
Generally a NOS part is something that would be found in the storeroom of a shop or manufacturer.

True, the NOS fairy dust magic instantly disappears the moment you mount that much cherished NOS component on a frame or other components and put the first most inconsequential "witness" marks on it.....
It used to be torture for me to do so, but it gets easier the more you do it when building up bikes with NOS parts. You might remind yourself what you bought them for anyway to make it easier....
Mehhhh!.....Use the damn things!!.........or you can might be considered just a hoarder/speculator by C&Vers....

NOS as applied to bike parts and car parts is an old part (been around a while) that has not been used but may show some shop wear. Packaging may also be tattered. Sometimes they include the description "new bike take-off" or "installed on display bike but never ridden" which mean what they sound like - may show bolt marks but not actually used. I like to buy NOS vintage parts so I don't get something that has been screwed up by someone else's rough-handed efforts to adjust or repair it. Immediate decrease in value when I use it is no big deal since NOS parts are still usually cheaper than they would be (inflation considered) if they were still being made today and will last longer than old used parts. Gotta know what you're getting though, paying for NOS and getting old and used is not good.

I buy NOS mostly to avoid any functional/wear problems with components. But I don't hesitate buying used stuff too, when they are in good enough condition and will clean up OK. You can easily save 30% doing so in most cases.

Ye I am looking at a fork there on eBay. The chrome looks immaculate. They are lugged and have an uncut steerer with a 27mm crown race which is exactly what I'm looking at. The seller hasn't named them as NOS but you can tell they've never had a wheel put on them or been threaded onto a headset everything is super clean. I like the piece of mind in buying parts so new like.

NOS - New Old Stuff, as opposed to Old New Stuff. How Stuff can be New and Old at the same time is beyond me, just as is how it can be Old and New at the same time. Maybe it means New Old Simultaneously. New Old Stuff is often taken to mean New Old 'Spensive. NOS could also be Never On Sunday, depending on the situation. Or it could be Nothing Or Something, for the ultimate non-committal answer.
I wouldn't put much Stock in this answer if I were you.
