I commute on a 1977 Cilo out of Reynolds 531 with Shimano dropouts and aluminum fenders full Nuovo Record.
I have lots of fun on it, passing all the electric bikes and trendy narrow-bar single-speeds. We'll see how it goes in the snow...

I have a '73 Schwinn World Voyageur that I ride 90% of the time for daily commuting and sport rides.
I have a '85ish Takara MTB converted to fixed gear for foul weather and as a backup when the Schwinn needs some work.
I also have a '98 Nishiki dept store hybrid bike that I use pretty much just for towing my daughter on family outings on the bike paths.

I have too many to list, really need to prune the keeper fleet. The only modern bike I have is the one I built at frame building school earlier this year. Even then, I built it in a somewhat C & V fashion, mimicked the layout of my 1987 Schwinn Cimarron.
As for regular riders:

All my current bikes (road and MTB) are between '79 & '95. Mostly '80s. None of the bikes I owned before '79 have survived the many moves from place to place. All use period correct parts except for the consumables. No STI.

I'm sure this will rankle some feathers in the C&V, but as I develop as a cyclist I'm gravitating more toward newer, purpose-built bikes (and ultimately, full custom, which also means new). I've done my share of re-purposing, converting to 650B, etc, but as my cycling preferences evolve, I'm finding that my C&V bikes, even the ones built up true to their period, aren't my "funnest" bikes. Yes they might be the prettiest, they may ride very nicely, and I still commute on heavily modded C&V bikes, but if I'm going out on a ride for riding's sake-- a century ride or more commonly, a 50-70 mile climbing ride, I grab one of the newer bikes. And I very much like 10-speed indexed shifting. That said, my "new" bikes are built very much with a nod to classic bikes, and with a mix of new and C&V parts. In fact, when my new Jeff Lyon custom gets built up, I may even expect some to call it a fop chariot.

I'm sure there has been a discussion on what constitutes a C&V. For cars, classics are 20-40/45 years old and vintage 40/45 years or more. if following this, bikes born btwn 1994 and 1974/1969 would be considered classics. All my C&V bikes would be considered classics and unfortunately usually unrideable as they are usually works in progress except for a 1984 Ciocc with sew up tubulars which only takes 10 mile local rides, because when was the last time you saw someone with a tubular tire sticking out of their jersey pocket? I'll get another fun bike ready this weekend for either my soon to be classic, 1998 Ibis Spanky or young classic, a 1992 Bruce Gordon RnR which is 98% done.

Impossible for me to pick the most fun for C&V and yet can relate to southpawboston's comment. I have a 2010 Giant Rapid 1 that has become quite the 'do-it-all' rider. From century rides, light tour camping to dropping in at off-road area's (not talking gravel but obstacle, rooted, rocky, steep ATB trails). All it takes is a quick swap to a second set of wheels, cogset and wider, knobby rubber. After some fairly abusive off-road ventures, I've finally given it the respect it deserves. Far more into classic bikes but this modern day rider is just a hoot and nothing goes out of adjustment. Darn reliable components with a full rigid frame / fork in the rough stuff is funnnnn!
Thinking of building something along the concept of that Rapid but will be of 70's era. Can you imagine a vintage Paramount for offroad?

My newest bike is a 1995 Bianchi Volpe. At least I think it's a 1995; I'm not completely sure. In a year, it becomes a vintage bike.

My go to bike is my 531c Sandy Gilchrist fast tourer (1984-5). If I want to go for a fast run I take my 1995 Cinelli Super Corsa, and on high days and holidays (and if I want to remember my early days with 10 speeds, I ride my 1964 Flying Scot.
I've got moremodern bikes (hybrid, tandem and MTB) but they don't get ridden as much.

All my bikes are vintage (parts and frames) and all are fun to ride.
'86 Look 753, vintage Campy/Mavic parts: My go-to bike for longer, fast-paced rides.
'72 Cilo, mostly original: Daily fair weather commuter
'74 Nishiki Competition, all orig.: Foul-weather commuter. It's in great, restored condition though. A bit on the heavy side--my least "fun" ride, but still fun.
'90 Parkpre MTB, vintage Deore build: trails, fun, rides with dog (he heals alongside the bike) and daughter.
'74 Peugeot UE-8, orig. with vintage upgrade: errands, grocery-getter, weekend rides with family, slow-paced local rides.
'89 Parkpre, DA7400 build: backup go-fast bike, used to be teenage team race bike
'73 Speedwell Ti, esoteric period build: A bit of a garage queen. Occasional fair-weather moderate-paced Sunday rides.
