Just got a 07 Specilaized Globe Sport

This is my first experience with 700cc tires. The max psi is 100. Should I go to the max or keep it below since I weight about 325lbs?

You want to go max on the tire pressure or you will the take the risk of getting pinch flats. I never go below the max PSI on my bike.
