Well now that you brought it up!.....We are in Cali but Gina's family is originally from New Mexico. I guess that makes them New Mexicans!.. It's a treat for them to import these Hatch peppers from NM once a year when in season. Well that's the story they tell me. They could be lying but who knows!

She just picked up a 30 lb bag of peppers. Last couple of days she's spent roasting them then packing them in baggies to place in the freezer. She goes thru them one right after another. The whole house smells like a big pepper and it wil be peppers with everything for the next few days!

They are HOT! She loves 'em, I like 'em. But then again, I'm an Old Mexican!

So we've got 30 lbs of this stuff in the freezer!

sometimes I get a craving and I dont know what it is...

I grab 6 or so and normally some saltine crackers...

cures what ails ya...

Cut off the wide end, clean out the seeds and membranes, put in a little lowfat cream cheese, add some protein (shrimp, sausage, brisket, whatever), top with 1/4 slice bacon held on via toothpick, place vertically in cooker, and bake in 350 degree oven for 35-45 minutes.

peppers are actually really good for you, they boost your metabolism, and they help prevent colon issues, even colon cancer. sounds unbelievable but it is true, it keeps everything moving right along. lol.

Oh I believe it! I can literally feel the Hatch peppers scrub the inside of my colon like a scouring pad!................

OK these peppers have got to be from Colorado..
and I cant remember what kinda weahter makes em hot but clearly we haven't had it...
eating them whole and raw, pepper count to date nearly 24 and maybe and I say MAYBE lightly had any heat what so ever!!!
