I'd go with some light action Speedplays and adjust the float so that just the right amount of twist will let her out.

Apparently there is a little bit of a break in time for speed plays, so we put the pedals on her spin bike for a while until she got comfortable.

Surely my post doesn't require further clarification.

I was simply asking.

The only walking I've been involved in lately, is to the verge on the side of the road to repair what seems to be a string of rear tire blowouts.

2 in as many weeks.

I was going to suggest the multi-release cleat with Shimano's SPD system. I use those, and a couple of times when I've forgotten I had to unclip and just tugged hard in a panic the pedals released my foot in time to stop myself falling. With the lowest possible retention setting it doesn't take much to unclip

I've used clipless for several years, but have gone back to large platform pedals. If you wife is not very experienced or as you indicated , has a problem un clipping, it may be worth it to consider avoiding clip less and stay with platform pedals. I have found that I and most cyclists do not use clip less to full advantage anyway.
