At that weight you shouldn't be having such problems. When I was that weight I road 20.5mm & 23mm tires without problems, and I bet I was 5-10 psi off the posted max pressure. You may have problemactic tires, bad rim tape, or your riding style (going through potholes fully weighted) is the culprit. If your roads are that bad you've got no choice but to get some overbuilt tires like Gatorskins.

I used to get quite a few pinch flats (you can always tell when you look at the inner tube). It turns out (according to my LBS, Nytro) that I was running my tire pressure too low. I assumed that "hey, run it lower, then the tube won't "explode". How wrong I was, now I just make sure I'm over 110 PSI on the pump so even I lose a little air I still have a high pressure. One thing that I did note is that - maybe because of my garage - I do lose air and it doesn't take too many days/rides for my PSI to drop down to 80-90. As long as I keep the PSI up then I'm okay, well...until I hit thorns in San Diego on 101.
