It's a 130 +6 degree stem, and a typical setback post. Stems and seat posts are pretty standard adjustments. I'm 6'5" with short legs (32" inseam pants). Short of a full-on custom frame, this is my best option. A 62cm is too tall, and a 61cm endurance frame still required a stem swap.

For trail riding a basic trail style MTB is OK (ie not lightweight race style).
29" wheels are good but few 29ers use 36 spokes.
Suspension is a bit of an energy suck BUT it can protect the bike from sudden impulse shock, eg if you hit a sudden drop or curb. This matters with heavy riders.
Disk brakes are pretty standard and are good stoppers if your load is heavy.

Cyclo-cross style will also work but because of the mass market, 29"er is better value.
Big frames need fat tubes to maintain stiffness. You can never have too much stiffness in an XXL frame.

Bikes: Gravity Dutch hybrid, upgraded to 24 speed. Panniers, fenders... the whole shootin' match.

Overall height isn't the only factor to consider. I'm a little under 6'-2", but my inseam is almost 36 inches. I don't know if it can handle the weight, but I found that this bike frame fits me well, with room to spare. And it's cheap.
