What do you think?

full LX kit (disc brakes), the hubs laced to A719 rims with silver 14g spokes and brass nipples
Mallet pedals
Mary bar and Easton EA50 stem
Cane Creek S-3 headset
Schwalbe Big Apple tires (this is a slick tire)
WTB tubes
Thomson seatpost
the Brooks saddle

What do you think about this set up for a big guy (6'4" 360)?

Looks like a pretty nice commuter. At your size the biggest concern will be wheels. The Big Apples will help. Make sure whoever builds your wheels stress relieves the spokes and retrues or have your LBS do this if you bought a machine built wheel. Even a 40 spoke rear wheel might be something to consider. Still I'm 220 and ride some pretty rough roads on 32 spoke wheels. Once I retrued and tightened the spokes on my machine built wheel they have held up without a problem.

Use stainless steel spokes, silver is not very strong. Butted 14/15g will be slightly more durable and comfortable (36 spokes or more). Have the riding position set up so when you go over bumps your weight is distributed between your hands, feet and butt. The big apple tire looks good for your weight, but you may need a wider rim to take it.
