How well do e-bikes work in winter?

Anyone used them ni the winter? I'd like both mild and extreme temps. Mild being -10C - -15C. Extreme being more -25C - -35C.

Battery capacity drops in cold weather. Search the Internet for the type batteries you have and check the data sheets for the voltage drop associated with temperature.

I did not have a problem with my Giant Twist during the winter last year. Under load I would have a reduced range of about 10-15% as compared to summer. I however am in Georgia, so our lows are in the +5ºC to -5ºC range.
The batteries in my camera and other small electronics are much more affected by the cold than my bike.
