I use these from Nahsbar. They are a pretty good middle of the road size.

Do you have any experience with the waterproof-ness of those? I was thinking about picking up a set. They're on sale for $20 at the moment.

I really don't. The inner top of the bags have a cinch strap and a nylon boot to cover whatever is in there, then the tops of the bags fold over the cinched boots pretty far. The design seems very water tight, but I am not sure about the fabric.

They are for sure worth the $20.

Is there a rear view of those on a bike somewhere. I must know how thick they are. I'm looking for connected double panniers with each bag about half as thick as most I see on ebay

These are the successors to the Tailwind panniers of yore. I still use a pair of front Tailwind bags.

The techwinds are the right size, but very pricey - Angletech Techwind Panniers : Angletech/CycleDifferent Seems like they are aimed at the recumbent market these days.

I have an older rev of these. I love the minimalist mounting. Effective but doesn't make it annoying off the bike. *

I use a trunk bag will panniers that fold out if needed. I've been very happy with it.

I use the Detours Fremonster Flap Pannier. I think it's a reasonable size for your proposed load and it has a detachable shoulder strap for carrying off the bike.

Thin was definitely a design consideration for these! I made them 6 or 7 years ago - a bit overkill for most of my rides but pretty awesome for groceries or trips. These have an advantage over most commercial panniers in that both sides fold out, almost doubling the volume when I want but compact and narrow otherwise.
