I don't like quick/instant oats (texture is a bit wallpaper-pastey to me), but I make a big batch of steel cut oats Sunday night (on the stove now). 1c oats, 3c water, simmer ~35-40 minutes (I usually brown the oats in a little butter before adding the water, but not critical). Pour in container, toss in fridge. Smash with milk/raisins/brown sugar/flax seed/nuts/PB/etc in the morning and either microwave for a minute or throw in pannier and eat cold when I get to work. Repeat x4, then it's the weekend and time for far less healthy/quick breakfast.
Otherwise quick breakfast is usually yogurt/granola/fruit or toast/PB/jam/nutella, but I usually eat any of the above when I get to work, just a banana and 1/2c of coffee/milk before I ride in.

I love old fashioned oats and eat them every work day. It takes all of 3mins to cook them in the microwave. I then add some sweetner and cinnamon then eat. I like them that way. I also have egg muffins that I make on the weekend so that during the week I pop those in the microwave also and have a nice breakfast with little effort.

I take mine on a slice of whole wheat. Toasting is optional. I have this every day M-F.
I have cholesterol issues, and peanut butter is just what the doctor ordered (good source of Omega 3 fat). Bacon and eggs is the problem. I have a two egg breakfast once a week, and have not had bacon or sausage (even if from a "good" source like chicken or turkey) in years.

I cook old fashioned oats in a small crock pot. I put a timer on the crock pot and start cooking them 3 hours before I want to eat them. It takes me about 2 minutes to set up the crock pot and oats before I go to bed. I wake up, add whatever fixin's I want, and I'm eating good, old fashioned oats. I find them so much better than instant or quick oats. This techinque will also work for steel cut oats if that's more your style.

My wife makes me these oatmeal cupcakes. They are great on the go and require zero morning prep. Basically, it's oats and mushed banana. Things to add flavor range from cinnamon to coconut to chocolate chips. She bakes them on Sundays and we put them in the freezer. Stick 'em in the fridge 24 hrs ahead and they are thawed and ready to eat. Good carbs, clean sugars and they taste great! You can find recipes online. Just look for "oatmeal cupcakes".

am I the only one who doesn't eat before he leaves for work?
I do 12 miles, shower when I get here and then walk over to the local coffee place for coffee, and usually have a Clif bar for breakfast with my coffee.

Similar. I pick a cup of coffee on my way in. Then have a clif bar at work with my coffee. Never was a big breakfast eater. Prefer to wait 'til brunch time.

I'm trying to develop a good breakfast recipe that'll let me get the most out of my long morning commute. I think oatmeal is regarded as one of the best meals you can eat for breakfast, but I don't usually have the time. I probably only have 10-15 minutes to make breakfast, so I usually just make a protein shake, with juice and some fruits. What are some other simple, quick things I can add to the protein shake, because I think my breakfast lacks carbs? Or what are some other breakfast ideas that will be really quick and simple?

Instead of water in the oatmeal I was using the juice from a fruit cup with the balance made up of milk. This takes longer to absorb than with water so it's good to have some way to get it going before you wake up.
I don't know about your part of the world but around here there is a store called Winco that has bulk steel cut oats by the pound that cost about a tenth what they do in a canister.

Oatmeal is the winner. But do it this way. Pour 1/3-1/2 cup of oats into a bowl. Add water to the top of the oats, then drain it off. Add blueberries or other fruit. Eat. Oatmeal does not need to be cooked.

I don't like to ride on a full stomach either so, most of the time, I have a protein shake (with cold coffee as the liquid and a spoonful of sugar for extra carbs) once I get to work although, I've been really hungry (stomach ache) this week before I get on the bike so I've wolfed down a half-dozen or so of chocolate covered almonds as I leave the house (just because they were there, I'd have tried something else if they weren't).

It only takes me about 10 minutes to cook and devour my oatmeal. I just use the plain oats (5 minutes) and cook them on a stove top, but you could also use the quick cook (1 minute) and get more or less the same result. Here's my recipe for the 5 minute "old-fashioned" oats.
Boil 1-1.25 cup water with about 1.5 tsp cinnamon (helps regulate blood sugar)
When boiling add .5 tbsp butter and .5 cups oats
Cook 5 minutes
Remove from heat and add heaping spoonful of peanut butter.
Stir well until you get a thickened goo.
Add heaping spoonful of yogurt and stir well.
Add some nuts or fruit and some raisins. I use a few frozen strawberries. They soften because the oatmeal's hot and they cool the oatmeal enough for me to eat it.
The whole cooking process only takes about 8 minutes.
While the oatmeal cooks I am usually cleaning up in the kitchen, getting my lunch together, or getting my clothes together. I do this every day and have a little system so that I don't waste any time.
