Recommended brake pads
I have Kore CX brakes on my Kona Jake the Snake, and I am looking for advice on replacment pads. I would like to install "wet" type pads.
These are the brakes:

Using basic Tektro canti pads they are deeper than the braking surface of the rim. As a result I get ridges along rhe top and bottom edge of the pads.
Can non-canti pads be used? Kool Stop have a variety of low profile pads meant for BMX wheels.]

I'm having a hard time visualizing your problem. The pads that came with my Tektro cantis are only 10mm high. Surely, your rim has more braking surface than that, so I'll assume I don't understand.
I looked at the Kool Stop BMX pads on their web site, and I can't see a particular difference between those and standard V-brake pads, but they look like they'd work with your brakes.

from the picture, It's a V brake type pad. get a new pad set with a removable friction material insert,
there are numerous inserts that you can use then ,
mixed black /salmon compound Kool Stops a good start, once you have the holders for the pads,
you can try others, later, Swiss Stop is another company well spoken of..
