Good places to bike from Toronto...? Toronto -> London? Lake Simcoe?

What are some neat places you guys biked to from Toronto?
My dad prefers I go on trails mostly, but something like the waterfront trail from Toronto -> Niagara falls is good, too.

Any ideas or experiences?

The Waterfront Trail east of Toronto to the Quebec border is much nicer than the Waterfront Trail from Toronto to Niagara.

Another area to consider would be between Lake Ontario (Port Hope/Colborne) and Rice Lake. Most roads seem to be paved and to keep things interesting, it can very hilly.

I'm planning on biking up to Simcoe this summer as part of my 1st century. Interested to hear any other good suggestions. It would be great if people could post there most scenic/best rides in a .gpx file then I can load it into my garmin and cruise.
